Prosciutto Brie Sandwich with Broccoli Microgreens

Serves: 4

Ingredients:

  • 4 ciabatta rolls

  • 4 tbsp mayonnaise

  • 4 tsp dijon mustard

  • 4 tbsp Elderberry jam

  • 4 ounces broccoli microgreens

  • 1 large tomato

  • 6 ounces brie

  • 6 ounces thinly sliced prosciutto

  • 4 tsp aged balsamic vinegar

Directions:

Spread 1 tbsp of mayonnaise and 1 tsp of dijon mustard on each roll and top with a tbsp of elderberry jam. Next, to each roll, add 1 oz broccoli microgreens, a slice of tomato, two slices Brie then top that with two slices of prosciutto. Drizzle a tsp of aged balsamic vinegar over each sandwich. Slice each sandwich in half and enjoy!
